Hydroxytyrosol is a constitutent of olives that functions as a highly active antioxidant in the body. Antioxidants are bioactive molecules which are present in many plants, but not all of them exhibit the same levels of activity. Hydroxytyrosol is considered to be one of the most effective antioxidants and is growing in commercial importance. Hydoxytyrosol is a free radical scavenger, with an ORAC value (oxygen radical absorbance capacity) of about 4,000,000 μmolTE/100 g: ten times higher than that of green tea and more than twice as high as that of the Q10 coenzyme and quercetin.
