WACKER has developed a solution for masking unpleasant or bitter tastes in functional ingredients: The unpleasant taste profile of functional ingredients can be modified by complexation with cyclodextrins - ring-shaped sugar molecules produced enzymatically from starch. For example, health-promoting ingredients, such as green-tea extract, can be added to beverages without the familiar bitter aftertaste. Complexation with cyclodextrins can also mask odors.
